Cinnamon Hazlenut Latte!

Hello Everyone!

I know… it has been a week.. a crazy week in that, and when I look back..so much has happened, and nothing has happened.. have you ever had that feeling? And drinking.. how much have I drunk this week… we won’t even get into that.. water I mean 😉 You have to stay hydrated in Florida!

Here it is Saturday night.. and I am drinking coffee and learning about Vertebral column curvatures, what a life!

So, for this fabulous drink that pretty much tastes like a chai, I used

  • 1 cup skim milk
  • 4 tbsp Hazelnut Syrup
  • 1/2 tsp cinnamon
  • 1 cup of coffee

I mixed all of these together in a sauce pan, or you can microwave them. I foamed about 1/4 cup of milk to add to this drink and sprinkled with cinnamon and whipped cream. YUM!

I absolutely love my milk foamer! I use it ALL the time.. Sometimes I will foam milk and make a bowl of it and then eat it with a spoon, maybe sprinkle a little cinnamon or add a few raspberries!

Rainy Night Vegetarian Fajita Fiesta Salads

So it never stopped raining here this evening. The thunder and lightning was crazy! Insanely loud and it literally was shaking the thin glass of our windows…there was a moment when I was stirring some food in a pan and this huge crack of lightning happened and I literally thought someone was in our house shooting a gun. It was just crazy. I told Savannah at that moment I wish I had been wearing my hear rate monitor just to see how fast my heart was beating after that.

Well…we have a lanai and pool right in our backyard and all day the rain water slowly made the pool more full….I am sure it is going to overflow tonight if it continues to rain! You can see what I am talking about..

photo-52Savannah and I were both still cleaning and unpacking so we wanted a quick dinner. Savannah chopped up zucchini, broccoli and carrots to steam for our salads. I boiled eggs, and we heated up black beans.

photo-53For our “homeade healthy” tortilla chips we cut up Joseph’s Flatbreads and put them on broil in the oven for about 7 minutes. Make sure to keep an eye on these as we burnt the first batch with snapchat distractions 😉 These added a nice crunch to our salad, but they were also perfect with salsa!

For our salads we used: -2 cups iceberg lettuce, -2 hard boiled eggs, -1 tomato chopped, -1 cup frozen vegetables, -steamed broccoli, zucchini and carrots, -1/2 cup of salsa (not shown), -1 Joesphs flatbread baked, -1/2 cup black beans (not shown)

Strawberry Rhubarb Pie Monday

Rewinding back to Monday evening, after a fabulous healthy dinner that Savannah and I whipped up with basically everything we could find in the refrigerator..my parents mentioned that our neighbor had given us some rhubarb.

Rhubarb calls for one thing.. rhubarb pie! We put a few pictures up on our instagram and got quite a bit of feedback asking for the recipe so I am here to share it with you.

Savannah and I made two different “crumbles”. One was on the healthier lower calorie side while the other included real sugar and butter 🙂

We found our rhubarb in the grass.. still fresh, just cut and delivered!

We had heard that rhubarb leaves are poisonous and after some research it turns out to be true, so make sure not to eat the leaves or feed them to any of your pets!

So I took a great video of Savannah ‘harvesting’ our rhubarb but I can’t seem to find it on my computer so I will have to upload it later. She made sure to find the butchers knife in order to cut those stems! (it was quite the process)

But for most of you, I am sure you can find some rhubarb pre-cut and washed in the produce section or the frozen fruit section.

Ingredients:

  • 5 cups washed, chopped rhubarb (frozen or fresh)
  • 1 cup of strawberries (frozen or fresh)
  • 3 cups of oatmeal
  • 1/2 cup of milk
  • 2 tbsp cinnamon
  • 6 squirts of Skinny Girl Liquid Sweetener

  1.  Make sure to wash your fruit if it is fresh. We cut our rhubarb into about 1 inch pieces.
  2. Combine the strawberries, rhubarb and sweetener into the pan. We mixed it right in the baking pan.

3. Then mix the oatmeal, cinnamon, milk and a little more sweetener in a separate bowl.

4. Pour the oatmeal mixture over the fruit in the baking pan.

5. Bake in the oven at 425 degrees for about 35 minutes. You will have to keep an eye on the time and check the rhubarb to see how well it is cooking as it was uncooked to begin with.

The top should crisp up nicely in the oven… but make sure not to burn it 🙂

We served ours with vanilla ice cream, whipped cream and a dash of cinnamon.

Banana Oatmeal Chocolate Chip Cookies

Last nights sweet tooth went out this recipe which is one of my absolute favorites!

I combined:

  • 3 cups of oatmeal
  • 1 1/2 banana
  • 1 cup chocolate chips

You can add any other sweets (coconut, walnuts, peanuts, craisins etc). Mash bananas in with the oatmeal and chocolate chips and form into rounds. These bake for about 10-15 minutes at 350 degrees. They will not rise or flatten out, only get a little harder; so you can pack them onto the baking sheet.

Pumpkin Chocolate Coconut Flour Cookies

Ok so I have been absolutely crazy all week about this pumpkin, chocolate chip, coconut flour cookie dough that Haley and I made last weekend. So of course I want to share the recipe with you! I brought home a huge container of it and have been eating it raw, as cookies and mixed in with vanilla yogurt! This is seriously my new favorite sweet breakfast! I ❤ it!

So.. Ingredients:

The pumpkin is not pictured, while we ended up not using the cranberry mix for this recipe.

Ingredients:

  • 1 can organic pumpkin
  • 2 egg whites
  • 1/4 cup milk (your preference of kind)
  • 1 cup unsweetened applesauce
  • 1 cup chocolate chips (more or less depending on preference)
  • 1 cup oatmeal uncooked
  • 1.5 cup coconut flour* (can use almond flour)
  • sprinkle of cinnamon
  • (optional) Sweetener- can use Stevia, Monk Fruit etc.

Mix all ingredients together! Scoop into cookie balls to bake or use as an extra pumpkin crumble on other desserts! You can see our ‘cookies’ on the bottom rack. I will post those yummy green cupcakes recipe tomorrow!

*the coconut flour gives it a really nice texture, but if you do not like the texture of coconut flour you can substitute it for whatever type you like. Coconut or almond flour does keep this recipe gluten free.

Quest Ventures, Shopping and Sugar

Happy May 1st everyone! It is a double celebration day- Friday and the beginning of a wonderful month! What are your May day traditions?

Today is my first official day of ‘summer’ break. I slept in and then drove about half an hour up the coast of the state to visit my older sister for a few days. She had a dunkin donuts gift card, and so we decided to stop in for some coffee, seeing as how it was over 90 degrees out. This heat wave is a killer!

Can you believe that this is a large and it is 36 ounces! We measured it when we got home! This world is definitely becoming super sized! We then stopped by the local Red Mango, walked up to the door and surprise; they had closed! How weird! Our second favorite fro-yo store is Menchies. They have the best toppings and always super yummy flavors. I had mudslide and peanut butter yogurt topped with whipped cream, heath bar, frosted animal crackers, chocolate chips and snow cap candies. It was the perfect treat for such a warm day.

Next up on our to-do list was a stop at Target for a few supplies, check this out….

Wow!

We were on a baking mission..it will be a baking fest with a few new recipes coming tomorrow with lots of pictures! But these aisles were packed, carbs on top of sugar on top of more carbs! Phew….Now there is some real sugar!

On the way back to my sisters house we drove by a health food store and she thought they might carry Quest Bars. I have seen the pictures, read the blogs and heard everything there is to know about these magical bars that everyone loves. Sure enough…photo 3-5 photo 1-6

I was so happy to have finally found them!

I decided to just try a few flavors to get the taste of them..to see if they were “all that”..photo 3-2

I warmed up some of the chocolate peanut butter quest bar in the microwave, added a little PB2 and some strawberries for this delicious creation…
