This salad is absolutely delicious, low calorie, high in vitamins, takes less than 5 minutes to prepare and consists of all vegetables. What better combination!
Ingredients: Cucumbers, Tomatoes, Purple Onions, Balsamic Vinegar (quantity depends on servings) (a sweetener if you do not like vinegar)
You can use any vegetables that you like, but we have always stuck with the basics of cucumbers, tomatoes and purple onions. Sometimes we add garbanzo beans, kidney beans, cilantro, oranges, or black beans. Whatever your taste buds prefer!
1. Chop all vegetables that you are going to use into small pieces. If you have kids, this is a great project for them. Hand them a steak knife and set them up with a cutting board.
2. Mix vegetables together in a bowl and add vinegar to desired taste. If you like something sweeter I recommend adding a packet or two of stevia.
3. Try to refrigerate for at least 30 minutes prior to meal time to let the vegetables marinate. The longer the better. Top with a sprig of parsley or cilantro for color.
This is a great side dish, and is even better the second day!
