We’ve been on a real muffin kick around here lately. They are the perfect breakfast, snack, lunch, dinner, and dessert. Yep, basically anytime, anywhere. This morning I made some quick coconut carrot pineapple muffins. I used coconut flower to add a little flavor and some fiber. Check out the benefits of coconut flour here.
Paired with a little arctic zero, shredded coconut, and whipped cream, these muffins are perfecto!
Next on my baking list is zucchini muffins! haha just kidding… well maybe some zucchini bread. We have just been in heaven over here at La Spice Sisters household. There are so many generous people that have dropped off vegetables from their gardens for us. We have been rolling around in the romaine, squash, zucchini, broccoli, and snap peas and pumping out ideas of what to do with them.
